Ingredients
  • Chinese red date 80g
  • Milk 70g
  • Egg 4
  • Cake flour 150g
  • Brown sugar 75g
  • Baking powder 3g
  • Baking soda 2g
  • Salt 1g
  • Corn oil 80g
  • Sesame suitable amount

Prepare the dates

Remove pits from the dates with scissors, and then cut into small pieces in a bowl.

Add milk, stir well and let it soak for 15 minutes.

After the dates are well soaked with milk, put them into a blender and blend them to get date puree.

Put the dates puree in the corn oil in a bowl for later use.

Do the flour work

Add eggs, brown sugar and salt in a thin glass bowl (for better heat conductivity) in 40°C/104°F water.

Beat the eggs at high speed until there are no large bubbles, then turn to low speed to sort out the small bubbles.

Sift in flour, baking soda and baking powder in two additions.

Stir it until you don’t see any dry powder.

Take a small portion of the batter and add it to the date paste corn oil mixture and mix them well.

Final steps

Put the mixture into a mold of your choice. Shake the air bubbles out lightly.

Sprinkle the sesame seeds on top.
